Recipe of grilled avocado with coriander vinaigrette

As part of our collaboration with Boucherie Brunelle, Alain Larose, invites you, twice a month, to discover new flavours and culinary experiences in his column Recipes A. Larose. Today, he shows us a vegan recipe with a simple legume that is delicious as a side dish.
Ingredients
- 1 avocado
- 1 lime
- 1 tsp. of Dijon mustard
- 1 tsp. of honey
- 1 pinch of salt
- 1 pinch of pepper
- 1 tsp. of chopped fresh coriander
- 4 tbsp. of olive oil
Preparation
- Add the juice of half a lime, the mustard, the honey, the salt, the pepper and the coriander in a bowl.
- While whisking, add olive oil
- Cut the avocado in half, peel and pit
- Oil the avocado with your mixture
- Grill 5 min over high heat
- Cut into slices and baste everything with the remaining dressing
